Waterloo is pretty limited. There's one place in uptown across from the LCBO, who's name escapes me. I've heard that place is pretty good, but it too, closes at 6pm. Only places open past then are the more pricey salons in Conestoga mall. I usually just waited till I came back to Toronto for a weekend to get my hair trimmed. I have yet to get a good hair cut in Waterloo in my four years of being here...smh
(serious) why? i've been going to them for a couple of months now and i like them. maybe a bit pricey, but they seem to give decent service and actually care about your cut.
I'm originally from Waterloo and by far the best barber is Black and White Barbers in Downtown Kitchener. They are pretty young guys that know what they are doing and focus on cutting young adult and teen hair. But they are almost always really busy so prepare to wait and the prices are good too ($16).
I go here often since I live fairly close by now. I totally recommend them, even if there's a wait. They're quick, and with 4 chairs (I think they added another one recently as well) running it's not that much of a wait.
Only thing to be aware of though is that they don't do debit or credit.
google gives you answers right away whereas here on omguw, you must wait for a response and often (like now, for example) the response does not help.

Also, I think they're open until 6 Monday to Saturday, and open 'til 7 on Wednesdays and Thursdays.
